Russian raspberry jam in 10 minutes

When my last post about Mom’s special birthday cake got so many likes, I decided to share more delicious Russian recipes from my best cook ever. I always try to repeat and cook something my mom used to do, because I simply miss the taste of home. And one of such things is jams because in the US it’s totally different.

I have a great collection of American jams in my fridge – grape, blackberry, strawberry. But they are jams and this is the problem. In Russia/Ukraine we do it in a different way – our jams are called “Varenje”, usually it’s homemade and so, so tasty! This recipe is fairly easy – a small portion of raspberry treat can be made in 10-15 minutes or even less. But you will love it, Dare To Be Better promises!

You will need just berries+ the same amount of sugar and a little bit of water. Lemon juice is optional.

  1. Mash the berries.
  2. Add water (1/4 or 1/8 cup, it depends on how many berries you have) in a medium pan. Bring to a boil.
  3. At the same time add sugar, wait until you have a thick syrup.
  4. Add raspberries, turn off the stove and mix well until it’s cold and ready.
